Can’t Beet It!

Packed with folate, potassium, vitamin C, fiber, antioxidants and anti-inflammatory agents, it’s no secret that beets are a superfood. With the potential to help suppress certain forms of cancer and decrease blood pressure, these powerful little roots definitely pack a healthy punch. Studies report that when athletes add beetroot juice to their regime it may support exercise endurance and improve performance. Berry Delicious Smoothie Recipe

Ingredients

1/3 Cup Raw Beets (peeled and chopped)

1 1/3 Frozen Strawberries

1/2 Ripe Banana (I like to use frozen bananas, but room temp works also)

1/3 - 1/2 Cup Apple Juice (adjust based on desired thickness)

1 scoop Collagen Peptides (optional - I like to incorporate for additional gut health benefits)

Fresh Mint for Garnish


Directions:

  1. Place all ingredients in blender and blend on high speed until smooth.

  2. Taste and adjust to preference. Banana and strawberry will impact sweetness, apple juice will thin out the texture, and if you need to thicken it a bit, ice will do the trick.

  3. Garnish with fresh mint, an apple slice, try a sprinkle of coconut, or come up with your own twist.
